There are a few points here which you misunderstood.

First and foremost among them is that he was explaining reasoning to be lenient regarding coffee by being mitztaref together different opinions. This applies to bishul only and not pas.

One of those opinions is one that holds that a snack is by definition not OASM. According to this opinion, all snacks are not called OASM. This is not by any means agreed to by all. The Mechaber very specifically states that it does not need to be ללפת את הפת but rather even if it is לפרפרת it can be called OASM.

He never even said that all snacks are mutar as an actual psak.

steamed and dried. Some have argued that it's essentially an oven with steam. Others have said it's bishul.
It's common for newer ovens to have steam setting. (Rational, Altosham, etc)

Anyone familiar with whats allowed in this case?

 Baked some sweet potatoes in my fleishig Oven, the oven was not used in the past 24 hours prior to baking the sweet potatoes, can I use those potatoes in a milchig salad?
   Yes I know the potatoes are parve. But do they retain a flieshig status? Or fleishig keilim idea and should not be placed in a milchig salad?

  Ovens are always spot free in my home bh.
 So no oil and chicken stains in the oven.

Also many say that a clean oven returns to pareve status when it cools down anyway. Others say if the oven isn't Ben yomo and clean then it's pareve. So you've got a lot going for you.

Thanks, heard that even should there be a little spill in oven there's not enough liquid to cause the zeyah to spread and cause the potatoes to become flieshig.
   It's a like a parve oven as it wasn't used in over 24 hrs.

In Yeshiva. We knew they didn't check all the lettuce, it would be impossible with the amount needed and staff available. This was discussed as the reason it was able to be done.
Now that I'm thinking about it, I'm wondering what the makor is (if there is one).
