Mutar l’halacha. As a matter of fact, in the old days they would have violins at funerals to add to the emotions.

No, since this music actually makes a person very sad and does not bring him an iota of joy/happiness.

1) Aveilim are allowed to listen to sad music ?
2) If this used to be done why’d they stop ?

Not directly a halachah question.

I remember hearing a nice speech about jealousy/being happy with your lot/idea of "bashert".

The speaker discussed (I'm pretty sure they quoted a source) the concept that if you are jealous of something you need to understand that it's not "bashert" for you and even if you were only human being on the world, it still wouldn't be yours.

Does anyone know the source of this?

Seems like at worst a classic case of nat bar nat and therefore would be allowed bidieved.
Actually, to go ahead and mix the potatoes into the cheese salad would be considered l'catchilah, not b'dieved, and would therefore not be allowed according to your reasoning. However, in this case it would ultimately be allowed because the oven was not a ben yomo.
(I'll also assume that the potato was baked in an aluminum foil or such, and not in a fleishige pan, as that would change the question)

If youade the potatoes intending them to be pareve and later on you want to know if you can add cheese to them, most poskim allow that with nat bar nat.

And with it being eino ben yomo you can even make it with the intent of mixing it with milk.

This is besides that an oven is its own leniency.
Just because things turned out a certain way doesn't mean you were right.

I can say as a lay person living in an apartment with 1 sink, 1 oven etc. learning the halachos of nat bar nat was the most helpful thing.

There's another kulah brought down that if you only have 1 kli that can make the food, technically you can rely on nat bar nat lechatchila even if it's Ben yomo. In practice the guidance is still to try to be machmir but this does have the ability to help sometimes.

I don't want to say his name publicly, but I asked one of the head Rabbis at OU kosher if one could use a Ben yomo meat deep fryer to fry oreos (OU DE but marked D) and he said yes lechatchila.
