Is canvas covering the beams (or even plastic or tape for that matter) enough to put schach on, or does there need to be something thicker/harder in between ?

Metal beams? Run wood 2x4 across that and then the schach should run across the 2x4, so the wood should bear the weight.

Placed above the metal beams just as sort of a kosher חציצה? AFAIK it's worthless since the real maamid would still be the metal beam. If you cannot work around an easy fix then discuss the situation with a competent posek to try getting the best solution.

Every Canvas sukkah uses this. Unless you are choshesh for the Chazon Ish, of maamid d'maamid, it is totally fine. Wood that is not fabric or plastic.
The other thing you might have to be concerned about is the movement of the canvas. Some say up to 3 tefachim of sway, some say up to a tefach. and others say None At All. The best bet for that is Lavud straps although strings can work too (if you have them tight enough and at the right intervals.

The best bet for that is Lavud straps although strings can work too (if you have them tight enough and at the right intervals.
And the right amount of walls.

People placing the schach rolls to run directly on the canvas sukkah frame, without any wooden cross beams? AFAIK that would be a maamid, not a maamid d'maamid. According to the Cazon Ish even cross wooden beams wouldn't help. Unless we aren't talking of the same scenario.

Fabric is also mekabel tuma. Synthetics have a bit of a tumult about it and it makes a difference regarding kesamim and tzitzis as well, but even if it is not mekabel tuma it has to do with being from the earth or from the sea and is not kosher schach.

I thought you were talking about the wood on top that it wouldn't help because the "real" support is from the metal frame. It has to be wood not fabric or plastic, but it can be thinner like shims or 1x2 because if you don't go with the Ch"I the metal is supporting the weight regardless.

That's the common consensus, although I just saw now bringing from Reb Yisrol Yakkov Fisher that he was ok with that too because a mere היכר is also enough, but that's not commonly accepted. You'll see all over people running wooden beams even on the canvas frames and then criss-crossing the schach on top.

AFAIK a lot chabad rabbinim hold canvas sukkahs are problematic. Makes it hard on cholie moed as almost all places that advertise a sukkah have a canvas one. Plus chabad Minhag is not drink out of the sukkah.
