For the first time ever I hired someone to kasher. He was good and experienced and knows the halacha. Like @churnbabychurn I was never comfortable with hot water getting each part of the sink, so would double up with inserts, and I was also aware that the water was hot for only a few seconds after taking off the fire so would double up with an iron.
This guy came with a huge torch, did the grates and oven racks outside, did the sinks with the torch, plus Ajax in the drains, did the counters with a stone and only about 4 linear feet per pour.
In the meantime he heated the ovens up to 500 and torched them. These are not self clean, so I had never used them for Pesach , but figured why not. Hashgocha pratis because the self clean function in the oven that has it malfunctioned.
Long story short, in a quarter of the time that it would have normally taken me I have more confidence in the kashrus of my kitchen than I've ever had.
Then he told me it's his last year....
