It's a custom. Not a scource thing.
you can't say it has to be davka Shabbos, possibly creating difficulty for people, without a source. You can say 'people do' or 'usually is' not 'davka is'. [Spoiler alert - there is a source, although debatable, but my point stands].

Huh? The minhag is a Shabbos Kiddush. That's an undisputed fact. It's also not an obligation so don't do it if difficult.

And a Kiddush does not mean a meal. It does have to be davka Shabbos.

OK, as it pertains to this sugya, I don't see that the Minchas Yitzchak add anything to the Sefer Hamaor Hagadol and the Taamei Haminhagim?

I heard that a reason for a kiddish even long after the name was given is so that people will give Brochos (e.g., she should be Zocheh to Torah/Ben Torah, Chupa and Maasim Tovim), which can be very meaningful even from plain people. Similar reason for Tikun at a Yahrzeit, for Brochos that the Neshama should have an Aliya. So supplying the ice cream might well get you the same Brochos from your friends and neighbors that a Kiddush would.

+1, I personally know of a story of a girl which had issues in Shudduchim, and when they went to their Rov he asked if they made a Kiddush when the daughter was born, eventually the Father remembered that they never made one for whatever reason. That Shabbos he made a big Kiddush and she got engaged shortly thereafter. The Rov explained that when they didn't have the Kiddush they missed out on all of the Brachos
