What's happening is im out a 20% coupon.
But by me getting back the 20% coupon in form of a gc that allows me to use the 20% on a future purchase, it's as if i'm using the 20% coupon but now just in the form of a gc.

Well for starters the coupon isn't '$200' the coupon is '20% off' - the difference would be if you purchase something with the Gift card that was less than $800. For example, you bought a $1000 grill for $800, you returned it and now want to buy a grill that costs $750 instead. With a 20% coupon the 750 grill would cost 600, but since you got 200 back on the return, you've effectively 'stolen' $50 you weren't entitled to get. Had you returned the Grill with a receipt, and insisted on the 20% on your next item, that is what would have happened.
Eta; Push comes to shove, I went into the store, said I don't have my receipt with me, but she insisted that I use the cc I used to pay for it and have the refund go to there, vs a gc to use in the store which she made it sound like it's so complicated to create one.
As long as you have the cc you can now have your purchases tracked and returned.
But if I say don't have the receipt nor the cc, then I would come out ahead having stolen a few bucks.

Now not sure what he means? Does he mean that as long as they don't ask you if you have your receipt? You leave your receipt at home and the cc, so now you don't have either, or you lost or canceled one of them, so your left in this situation?
I would imagine he meant if they don't ask you for a receipt, or what you paid for it. Honestly, if they asked you what you paid for it, what would you say? Again, al pi halacha, it might be okay, but if you told them that you paid $1000 and you didn't your committing fraud.
