Not directly a halachah question.

I remember hearing a nice speech about jealousy/being happy with your lot/idea of "bashert".

The speaker discussed (I'm pretty sure they quoted a source) the concept that if you are jealous of something you need to understand that it's not "bashert" for you and even if you were only human being on the world, it still wouldn't be yours.

Does anyone know the source of this?

Seems like at worst a classic case of nat bar nat and therefore would be allowed bidieved.
Actually, to go ahead and mix the potatoes into the cheese salad would be considered l'catchilah, not b'dieved, and would therefore not be allowed according to your reasoning. However, in this case it would ultimately be allowed because the oven was not a ben yomo.
(I'll also assume that the potato was baked in an aluminum foil or such, and not in a fleishige pan, as that would change the question)

I can say as a lay person living in an apartment with 1 sink, 1 oven etc. learning the halachos of nat bar nat was the most helpful thing.

There's another kulah brought down that if you only have 1 kli that can make the food, technically you can rely on nat bar nat lechatchila even if it's Ben yomo. In practice the guidance is still to try to be machmir but this does have the ability to help sometimes.

Are you sure it's even DE? When I asked R' Belsky about oreos (around 10 years ago) he told me they are 100% parve.
I wonder what people who type "u" instead of "you" do with all their free time.

The OU maintains they are DE and also continues to mark them D even though they have rolled out DE to a limited number of products.

I wouldn't infer anything re my deep fryer comment on any other DE product.

In the OU madrich Hakashrus (from a while ago) they bring from R Elyashiv that DE of cholov stam for those who are machmir is a nat bar nat disura.

See Rema in Y"D 95:2 with Shach s"k 3, and you'll see that Nat Bar Nat through cooking or baking is more chamur, and is only allowed l'catchilah if not a ben yomo

A Posek that I know spoke to Rav Moshe Feinstein about it and he also pakened like the GRA's understanding of the RaMA [Others (IIRC the Aruch Hashulchan) learn the RaMA differently that he's only talking about the mixing lechatchila not the original intent of the cooking]
