since there's no lid on a flat top grill, it should be an easy kasher. am I missing something?

I am not totally familiar with the piece of equipment, but some issues I can see at a glance are the porcelain grates (new ones are abviously an option) and the enameled sides.

I guess too late, but there is a daas yochid that she is, however all other poskim have argued that the exemption is due to nursing

You need to start by understanding that technically there is no blanket rule that nursing women don't need to fast.

Correct, but nursing women have leniency if sick.
So the question would be, if a woman gave birth 1 yr ago and isn't nursing, is she considered a mainekes or not.
Unless you are saying there is no concept of meinekes at all in regards to fasting,  I'm not sure your point.

I think that a מינקת is exempt not the same way as a חולה.
Her exemption is because of the baby that's dependant on her.
That's why some poskim would suggest she starts to fast until first feeding of baby. But a חולה doesn't even have to start the fast.

ובנדו״ד יש כמה צדדים להתיר, חדא אם יש חשש שמא יפגשו בקבוצת אנשים גם זה בכלל הגנה, כבפנים - ראה שו״ע סימן ש"ג סעיף כ"ד בנוגע אבן תקומה שמותר לצאת כדי שלא תפיל, אע"פ שלא נתעברה עדיין. ועיין בפמ"ג דמיירי שיש ספק אם היא מעוברת, וא"כ בנדו"ד אם יש ספק שיפגוש אנשים יש מקום להקל.

ועוד שבפועל לדעת הרופאים ה״ז מגין. ומה שאדה"ז מביא בסעיף י"א שצריך דעתו שלא לצער (ולא סגי מה שבדרך כלל אנשים מצטערים) - שם מדובר בנוגע צער שאומדין לפי כל אדם פרטי, משא"כ בעניני רפואה דברופא תלא רחמנא, וכמו בחולה שיש בו סכנה וכדומה, שאפילו החולה אומר שאינו צריך ורופא אומר שצריך - ראה אדה"ז סימן ש"ל סעיף ה.

I confused his tshuvo with what I had seen in the name of Rav Chaim Kanievsky that the legal requirement makes it a malbush. I recall a better source than this but cannot find it now.

I think you are referencing to Minchas Asher Kuntrus Corona in Shyla #9, where he permits wearing masks on shabbos with no eruv even lichatchila.
