What's the logic in existing stock needing to be discarded but utensils not kashered?
My guess is that the possibility of non kosher taam from equipment in there was stam amino Ben yoimoi, and bedieved kosher, so no issue with keilim.
And they consider bought and stocked lechatchilla (to drink it).
Any experts, does that make sense?

I wouldn't be so sure there's an actual Kashrus concern - they would've spelled it out if there was one. More likely it's simply no longer supervised.

There is a Noda Biyehuda who mentions a concept of a year but this typically only used in a case where you need to rely on opinions we normally wouldn't use to make it at all possible to kasher something and the item is one of value with other lenient factors. It really depends on the judgement of the LOR for each specific case.

For number 1 I don't see what's the problem of converting to judaism, although she might have a problem getting married halachakly.
For number 2 I've heard that it's to scare away DeBlasio's inspectors

Quick background on Sous Vide cooking:
Essentially, you put a piece of meat or fish in a sealed bag. The bag gets lowered into a pot/basin of water. You then stick a sous vide cooker into the water and it regulates the temperature of the water to cook the item in the bag. The items typically cook for several hours at this low temperature.

- Usually the temp is well bellow boiling (say 130 degrees F)
- The water never comes into contact with the food

So now my questions:
- Seeing that the sous vide cooker never comes into contact with the food, and the food is sealed in a plastic bag, is it safe to assume that the fish cooked with this is pareve? Even if the pot I am normally cooking it in used for Fleishigs?

- How does this impact cooking for shabbos using it - i.e. given the cooler temperatures, could I put some salmon in right before shabbos and then take it out right before lunch?

The food does tend to leak occasionally. That being said, fish cooked in a clean fleshing pot is pareve in any case. Some have a minhag to use a dedicated fish pot but it is doubtful that minhag would apply here (safek yad soledes, etc.).

Many of not most  poskim would not allow sous vide on shabbos (shehiya, hatmana bedavar hamosif hevel) some are more lenient. Ask your LOR.

130 degrees is a safek Yad soledes both according to Rav Moshe and Rav Aharon and therefore it is treated as Yed Soledes Lechumrah (in other words, for basar v'cholov and issur bishul/shehiyah on shabbos, but we would also consider it not Yad solodes lechumrah, in that it wouldn't be considered mevushal to reheat in conventional methods)
