Is there any issue with sending a traif (actually traif--salami, etc...) gift basket to clients who are probably not-Jewish (based on names, but not ethnicities)? Is it an issue if the basket contains a meat and dairy item (not separate meat and dairy items, but a bacon/cheddar dip)? I recall learning that only kosher meat and dairy are an issue of hana'ah, but I could be wrong. Thanks.

Regarding the Bassar B'cholev you are correct, and it would not be assur b'hannah. (SA- YD 87,3)

The Taz (YD 117,2) agrees with this ruling. I would think this is especially true if they are clients or prospective clients.
(There is a different machlokes between Rama and Taz if one is permitted to buy non-kosher to feed his employees, when there is a requirement/expectation to feed them. See Aruch Hashulchan 117, 19 who says that one doesn't need to take to feed kosher to the workers.)

Regarding the Bassar B'cholev you are correct, and it would not be assur b'hannah. (SA- YD 87,3)

Interesting. Perhaps they mean foods without a hechsher but not foods that are assur m'diorysah to eat.

כתב הרמב"ם (הלכות שבת פרק ל' הל' ט"ו), וז"ל: "השבת ועבודה זרה כל אחת משתיהן שקולה כנגד שאר כל מצות התורה, והשבת היא האות שבין הקב"ה ובינינו לעולם, לפיכך כל העובר על שאר המצות הרי הוא בכלל רשעי ישראל, אבל מחלל שבת בפרהסיא הרי הוא כעובד עבודה זרה ושניהם כגוים לכל דבריהם". ושם במגיד משנה כתב, וז"ל: "מסקנא דגמרא פרק הכל שוחטין (חולין ה') שהעובד כוכבים ומזלות ומחלל שבתות בפרהסיא הרי אלו מומרין לכל התורה כולה והרי הם כעובדי כוכבים ומזלות גמורים. ומבואר בהרבה מקומות. וטעם השבת – לפי שהוא מורה על החדוש, והכופר בחדוש כופר בכל התורה כולה, ולפיכך צריך להאמין ולקבוע בנפשו אמונת החדוש ולשמור השבת שהוא אות נאמן עליו". וכתב השו"ע (אבה"ע סי' קכ"ג סעי' ב'): "ישראל שהמיר, או שהוא מחלל שבתות בפרהסיא, הרי הוא ככותי לכל דבריו",וכתב השו"ע (יו"ד  סימן ב' סעי' ה'): "מומר להכעיס, אפי' לדבר אחד, או שהוא מומר לעבודת כוכבים או לחלל שבת בפרהסיא, או שהוא מומר לכל התורה, אפילו חוץ משתים אלו, דינו כעובד כוכבים".
וכתב הש"ך שם (ס"ק י"ז): "דע שיש מחלוקת בין הפוסקים בזה, והעיקר כהאומרים דעבודת כוכבים אפילו בצנעה אפילו רק פעם אחת הוי מומר לכל התורה ודינו כעובד כוכבים, וכן אפי' חילל שבת פעם אחת בפרהסיא, מיהו באותה שחיטה לא נעשה בה מומר, כגון בשוחט לעבודת כוכבים או השוחט בשבת – אין שחיטה זו אסורה משום שחיטת מומר אלא משום שוחט לעבודת כוכבים כדלקמן בסימן ד' וכן משום שוחט בשבת בסי' י"א, וכן נראה דעת מהרש"ל פ"ק דחולין סי' ז'".

הנה כי כן, אם זה האיש הנז' בשאלה הנז' הוא מחלל שבת בצנעה, הרי זה מצטרף לעשרה, כי דינו הוא כישראל גמור, ועיין להגאון חתם סופר בח"מ סי' קצ"ח, שהביא דברי הרמב"ן בענין חלול שבת ויו"ט וכתב, וז"ל: והיוצא לנו מכל הנז"ל שאסור לשום מי שהוא אשר בשם ישראל יכונה, לפתוח חנותו או לסחור במרכלותו ומסחרתו, או לטעון ולפרוק מעגלה שלו בשבת ויו"ט, ואם לא שמע וא"א לכופו הרי הוא מופרש מעדת ישראל, ואין לו דת כלל, ופסול לעדות ולשבועה ולכל דבר, ושחיטתו אסורה, וכל מאכליו ומשקיו בחזקת איסור, כי אבד נאמנות שלו, ואין חילוק בין פותח חנותו מקצתו או כולו או חלונותיו וכדומה, עכ"ל ע"ש.
מיהו בענין מחלל שבת בפרהסיא מבואר באחרונים ביו"ד סי' ב', דהיינו דוקא שחילל שבת בפני עשרה מישראל, ומבואר שם עוד, דאפילו לא חילל בפני עשרה, אם חילל במקום גלוי שנודע לרבים, גם זה מקרי פרהסיא, אבל אם לא היה כן, גם מחלל שבת לא הוי מומר לכל התורה, ודינו כישראל ומצטרף לעשרה. ועוד דע דאם זה האיש אינו מאמין בדברי רז"ל, גם זה דינו כגוי, ואינו מצטרף לעשרה, וכמפורש בדברי מרן ז"ל ביו"ד סי' קי"ט ס"ז שהבאתי לעיל, ועיין ש"ך ס"ק ט"ז, ועיין בש"ח ותורת שלמים סי' ב' ס"ק י"ח, במבעט אפילו בשב ואל תעשה ה"ז אפקרוס, ודינו כגוי, ועיין להגאון אש"א סי' ל"ז סק"א בד"ה מריש הוה אמינא ע"ש.
נמצא העולה מכל הנז"ל דבשאר עבירות, חוץ מע"ז וחלול שבת בפרהסיא, אם עבר לתאבון דינו כישראל לכל דבר ומצטרף לעשרה, ורק אם ראינו אותו שפרק רוב מצות מעל צוארו, אז אם עושה לתאבון, והוא נזהר בקצת מצות ג"כ דינו כגוי, כמ"ש הגאון בש"ח, והבאתי דבריו לעיל".

In קובץ מאמרים, R' Elchonon Wasserman HY'D brings down the opinion of R' Chaim (Soloveitchik) who quotes the Rambam in Hilchos Teshuva 3:7

חֲמִשָּׁה הֵן הַנִּקְרָאִים מִינִים. הָאוֹמֵר שֶׁאֵין שָׁם אֱלוֹהַּ וְאֵין לָעוֹלָם מַנְהִיג. וְהָאוֹמֵר שֶׁיֵּשׁ שָׁם מַנְהִיג אֲבָל הֵן שְׁנַיִם אוֹ יוֹתֵר. וְהָאוֹמֵר שֶׁיֵּשׁ שָׁם רִבּוֹן אֶחָד אֲבָל שֶׁהוּא גּוּף וּבַעַל תְּמוּנָה. וְכֵן הָאוֹמֵר שֶׁאֵינוֹ לְבַדּוֹ הָרִאשׁוֹן וְצוּר לַכּל. וְכֵן הָעוֹבֵד כּוֹכָב אוֹ מַזָּל וְזוּלָתוֹ כְּדֵי לִהְיוֹת מֵלִיץ בֵּינוֹ וּבֵין רִבּוֹן הָעוֹלָמִים. כָּל אֶחָד מֵחֲמִשָּׁה אֵלּוּ הוּא מִין:
There are five categories of atheists; (1) he who says that there is no God and no Omnipotence; (2) he who says that there is an Omnipotence but that there are two or more such; (3) he who says that there is One Lord; but that He is corporeal and has a form; (4) Likewise one who says that He alone is not the First Cause and Creator of all; (5) likewise he who worships a star, or planet, or any other as a mediator between him and the Lord of the universe; every one of these five is an atheist.

The Ra'avad over there asks:

והאומר שיש שם רבון אחד אלא שהוא גוף ובעל תמונה. א''א ולמה קרא לזה מין וכמה גדולים וטובים ממנו הלכו בזו המחשבה לפי מה שראו במקראות ויותר ממה שראו בדברי האגדות המשבשות את הדעות:
He who says that there is One Lord but that He is corporeal and has a form. Why does he call such one an atheist? Many greater and better than he followed this opinion according to what they saw in phrases, and more particularly in the texts of the Agadot (legends of the Talmud) which misdirect opinions.

R' Chaim explains the Rambam that a nebach Apikores is also considered a apikores because it is so vital to be part of Klal Yisrael to have the correct Emunah in theses matters, one cannot be part of them if one doesn't have them regardless of whether it's his fault or not.

R' Elchonon asks on the explanation of R' Chaim that according to his understanding a infant and young child are also not considered part of Klal Yisrael as they don't have the correct (or any) understanding about Hashem. So according to R' Chaim there is no such thing as a Tinok Shenishab, according to R' Elchonon there is.

It's hard to answer such a question without details.
Was he showing everyone his phone on the way out? Did he know that he can't use a phone on shabbos, and he's just going out to be polite?

Is he telling everyone he parked around the corner? Is he parking there cause he's embarrassed? Does he even know that he can't drive on shabbos? And if yes how severe it is according to the Torah? Does he appreciate Torah and mitzvos, or he is still not learned enough to appreciate it?
A side question (according to some poskim) is if you are asking him to be number 10? and is he going to daven with you? (showing that he cares about yidishkeit) or is he just doing you a favor and just sitting there till you're done?

There are so many variables and I don't feel we have to go out of our way to consider people to be a mechalel shabbos b'farhesya

I doubt that would be the same with chilul shabbos. R' Chaim was talking about belief.

B'farhesia is not specifically in shul. If he drove to shul, that itself is b'farhesia.
