Any input? I usually have 20+ chrome windows open at once and multiple excel sheets.
I'm not going to make the decision for you, but I'll give you some info to help you decide.
1. Very little difference between 11th gen i5 and i7 (at least the ones that end in G7), so I wouldn't give that any weight.
2. 3000 series made of plastic. Get 5000 and up if you are spending good money.
3. You sure 13" is large enough for your Excel sheets? (I assume you are talking about normal Excel sheets, and not massive Excel files that require massive CPU power.)
4. The third one has soldered RAM, and according to reviews it is not upgradeable. 16GB should be enough but sometimes 32GB is better, and doesn't cost too much to upgrade. So, the third option is a burnt bridge for upgrading the RAM.
5. Some of them have Windows 10. Personally, I use both but prefer 10 when they give it to me.
6. Did you check Dell Outlet? You may be able to get these cheaper.
