Have both emails open in outlook
Right before leaving for the night (or better yet-the weekend) go to the old email address and select all emails (ctrl-a) and copy paste them into the new email. Drag and drop works too.

They will upload to the server of the new email address, but it will take time and new emails will be delayed in showing up on the computer while it processes them.

is there a tool or faster way to copy the emails and folders over?
