What's a good tape to use for taping down counter tops?

Hands down Scotch Strapping Tape 8898 or equivalent. Stays on strong, comes off clean. This is the type of tape you see on new appliances. Not 100% waterproof, but better than most. Stays on also in refrigerator.

Also metal tape is good. Stays on strong and is 100% waterproof, but not as easy to remove.

you can make your own by mixing oil and baking soda to make a paste

This tape is 100% waterproof and usually available at your local Home Depot. Unlike the strapping tape it doesn't come off residue free. You will need to use goo gone.

I use it at the seams between the corrugated plastic covering the counters.

Tuck it under the counter top,there's no need to go to the cabinets all the way below, unless you're using masking tape which is quite gentle you can do it all the way down.
