To take advantage of an Amex offer, first save the offer to your card, then do the spending. There are a few ways to save offers to your card; http://www.amexoffers.com/ has links to most of them. Depending on the offer and depending on your Amex card, it may be available via none, one or more than one of these methods:

americanexpress.com web site
Log into the americanexpress.com web site. If you get the new version of the site, scroll down to Amex Offers & Benefits at the bottom of the page. If you get the old version, click the Amex Offers For You tab. You can also see on this web site which offers you already saved (even if you saved them via a method other than this web site) and which offers you already redeemed. This method is only available for Amex credit and charge cards issued by American Express.

Saving an offer on AmericanExpress.com to one of your cards will automatically make it unavailable for the rest of your cards linked to the same login. The way to get around this is by opening all of your cards in separate tabs and then saving the offer in each.  **

**Sign into different tabs?!?
Sign onto your Amex account. card #1 is on the page.  scroll to offers. note a good one. 
Open  tab 2: amex.com (or with Chrome, right click on the first tab and choose Duplicate) > you are already logged in.> go to my accounts > click on card #2  on the top of the page. scroll to offers. check for same good offer. 
Open tab #3. repeat as for tab #2. Repeat as necessary.
THEN: on tab #1 - click 'save' .  Then on tab #2 click 'save' . Then on each tab.
If you so desire: check on each card's 'saved offers' to check that it's there.

This link should take you to the Amex old layout,
which is much easier to scroll down through all the offers.

Amex® Mobile app for iPhone®
This method is only available for Amex credit and charge cards issued by American Express. The login is the same as for the americanexpress.com web site.

Social media
The social media options are available even for cards that cannot have an americanexpress.com login, such as Bluebird, Serve and Amex cards issued by Citi, USAA, PenFed, Bank of America, etc. For social media, first sync your card to your social media account, then save the offer. If you unsync your card after you save the offer, the offer remains saved and you can still subsequently spend and get the credit. Unsync here: https://sync.americanexpress.com/unsync/Index

Sync here: https://apps.facebook.com/amexlinklikelove/?extlink=syncHome
To save offers for which there is no Twitter hashtag to cards that cannot have an americanexpress.com login, this may be your only option. After your card is synced, you will see the available offers. You can also see the offers you already saved, even if saved using another method.

Twitter
Sync here: https://sync.americanexpress.com/twitter/Index
If you do unsync and resync multiple cards on the same Twitter account you must change the tweet slightly each time like:
#Amex???
#Amex??? 1
#Amex??? 2
And so on

Dedicated web site for enrollment
Some Amex offers, most notably Small Business Saturday, but also NYC Restaurant Week, Home Depot, Amazon and DirecTV, offer a dedicated web site where you could enter your card information to enroll.

For Bluebird/Serve cards
Amex offers can be saved to the primary account (but not Family Accounts) via the bluebird.com web site. Go to Plan & Manage > Amex Offers. Amex offers can also be saved to the primary account (but not Family Accounts) via the Bluebird mobile app.

For Sams Club, will the transaction date be the ship date or the order date? In other words can I still order? It expires the 14th.
I think it would be too late for the SC offer.
It always takes a few days until the charge post.

Thats a given it will definitely take a few days to post. I am looking for data points from people that placed GC orders, was the ultimate transaction date the order date or the ship date?

Neither
I ordered on May 23rd. It was delivered may 30th. And the card was charged 6/2/18.

I still have orders placed on June 3rd. Still showing processing and I have not been charged yet for them.

Sure. Go to a gas station and pump gas for other people and pay with your card. You make 10%

Do they get an authorization right away when you submit the order? If so, you can also print / screen shot the pending transaction.

Yes. Pending charges came up right away. After a few days it fell off
