To take advantage of an Amex offer, first save the offer to your card, then do the spending. There are a few ways to save offers to your card; http://www.amexoffers.com/ has links to most of them. Depending on the offer and depending on your Amex card, it may be available via none, one or more than one of these methods:

americanexpress.com web site
Log into the americanexpress.com web site. If you get the new version of the site, scroll down to Amex Offers & Benefits at the bottom of the page. If you get the old version, click the Amex Offers For You tab. You can also see on this web site which offers you already saved (even if you saved them via a method other than this web site) and which offers you already redeemed. This method is only available for Amex credit and charge cards issued by American Express.
The maximum number of offer that the site will show you is 100. If you already have 100 available offers, there may be other offers that they are prepared to show you, but are not showing you because you already have the maximum. To see additional offers, save one or more of your available offers and then refresh the list (F5 in most Windows browsers).

Saving an offer on AmericanExpress.com to one of your cards will automatically make it unavailable for the rest of your cards linked to the same login. The way to get around this is by opening all of your cards in separate tabs and then saving the offer in each.  **

Sign onto your Amex account. card #1 is on the page.  scroll to offers. note a good one. 
Open  tab 2: amex.com (or with Chrome, right click on the first tab and choose Duplicate) > you are already logged in.> go to my accounts > click on card #2  on the top of the page. scroll to offers. check for same good offer. 
Open tab #3. repeat as for tab #2. Repeat as necessary.
THEN: on tab #1 - click 'save' .  Then on tab #2 click 'save' . Then on each tab.
If you so desire: check on each card's 'saved offers' to check that it's there.

This link should take you to the Amex old layout,
which is much easier to scroll down through all the offers.

Amex® Mobile app
This method is only available for Amex credit and charge cards issued by American Express. The login is the same as for the americanexpress.com web site.

Dedicated web site for enrollment
Some Amex offers, most notably Small Business Saturday, but also NYC Restaurant Week, Home Depot, Amazon and DirecTV, offer a dedicated web site where you could enter your card information to enroll.

For Bluebird/Serve cards
Amex offers can be saved via the bluebird.com web site. Go to Plan & Manage > Amex Offers. Amex offers can also be saved via the Bluebird mobile app.

For cards not issued by American Express (such as Amex cards issued by Citi, USAA, PenFed, Bank of America, etc.)
Add offers to your card at this site: https://www.americanexpress.com/us/network/shopping.html
You will be prompted for your name, card number and email address.

When I get Amex offer to enjoy 0% apr for certain amount of time if needed and I accept it is that not a good sign for amex ? Like showing them maybe I cannot pay up right away, anybody know?

Accepting it is no big deal. Using it to carry a balance is what matters; the concepts discussed elsewhere on this board apply.

So its not good to carry a balance? where can I find more details on this?

Does amex care if the employee card is for a real person? OR i can name it for example "employee card 1,2,3" ?

They ask for a DOB and SSN when you confirm receipt of the card. But you're able to spend on it prior to providing those details.

It will erase from all cards under your name, No distinction between business and personal.

Also, if the primary and AU have the same offer, will the offers be erased on all cards of the same brand once one of the cards enrolls in an offer?
If the AU is under your name, then it will disappear, if it's under someone else's name then it will will not.

I'm not sure if this was mentioned before on here.  But took me quite a while to figure that out as I wasn't sure if I'm dreaming or what.
If you go scrolling thru offers on one card "thru the app" it will show you some offers for example the Dell offer. But once you go to another card and then returning to the first card where you saw the dell offer , that Dell offer might be gone on that card but once you go out and go back again it may show up again. Basically every time you scroll thru offers thru different cards the offers and the layout of the offers completely changes.

And thats why I got confused when I added the offer of Amazon 5 × per dollar on my AU card,  which is under MY name but separate login then my primary account.] The offer then disappeared on my primary login account when it was there before. Wasn't sure if it works that way or it just happened bcs I browsed other cards and I have to play around a little more to bring it back. But it never came back.

Correct.
What I mean to say is, That once saved to a specific card, it disappears from all other cards, and you can't take the offer off one card to put it on another.
The taking off the login that you mentioned used to work when you were able to have multiple cards with the same name save the same offer, just not with the same user ID, but that changed a while back already.
