To take advantage of an Amex offer, first save the offer to your card, then do the spending. There are a few ways to save offers to your card; http://www.amexoffers.com/ has links to most of them. Depending on the offer and depending on your Amex card, it may be available via none, one or more than one of these methods:

americanexpress.com web site
Log into the americanexpress.com web site. If you get the new version of the site, scroll down to Amex Offers & Benefits at the bottom of the page. If you get the old version, click the Amex Offers For You tab. You can also see on this web site which offers you already saved (even if you saved them via a method other than this web site) and which offers you already redeemed. This method is only available for Amex credit and charge cards issued by American Express.

Saving an offer on AmericanExpress.com to one of your cards will automatically make it unavailable for the rest of your cards linked to the same login. The way to get around this is by opening all of your cards in separate tabs and then saving the offer in each.  **

**Sign into different tabs?!?
Sign onto your Amex account. card #1 is on the page.  scroll to offers. note a good one. 
Open  tab 2: amex.com (or with Chrome, right click on the first tab and choose Duplicate) > you are already logged in.> go to my accounts > click on card #2  on the top of the page. scroll to offers. check for same good offer. 
Open tab #3. repeat as for tab #2. Repeat as necessary.
THEN: on tab #1 - click 'save' .  Then on tab #2 click 'save' . Then on each tab.
If you so desire: check on each card's 'saved offers' to check that it's there.

This link should take you to the Amex old layout,
which is much easier to scroll down through all the offers.

Amex® Mobile app for iPhone®
This method is only available for Amex credit and charge cards issued by American Express. The login is the same as for the americanexpress.com web site.

Social media
The social media options are available even for cards that cannot have an americanexpress.com login, such as Bluebird, Serve and Amex cards issued by Citi, USAA, PenFed, Bank of America, etc. For social media, first sync your card to your social media account, then save the offer. If you unsync your card after you save the offer, the offer remains saved and you can still subsequently spend and get the credit. Unsync here: https://sync.americanexpress.com/unsync/Index

Sync here: https://apps.facebook.com/amexlinklikelove/?extlink=syncHome
To save offers for which there is no Twitter hashtag to cards that cannot have an americanexpress.com login, this may be your only option. After your card is synced, you will see the available offers. You can also see the offers you already saved, even if saved using another method.

Twitter
Sync here: https://sync.americanexpress.com/twitter/Index
If you do unsync and resync multiple cards on the same Twitter account you must change the tweet slightly each time like:
#Amex???
#Amex??? 1
#Amex??? 2
And so on

Dedicated web site for enrollment
Some Amex offers, most notably Small Business Saturday, but also NYC Restaurant Week, Home Depot, Amazon and DirecTV, offer a dedicated web site where you could enter your card information to enroll.

For Bluebird/Serve cards
Amex offers can be saved to the primary account (but not Family Accounts) via the bluebird.com web site. Go to Plan & Manage > Amex Offers. Amex offers can also be saved to the primary account (but not Family Accounts) via the Bluebird mobile app.

If you will do a lot of this then get the plus. If you will max it out ($25,000). You will get back $500 ,  There is a Groupon deal now on Sams membership

How do you know that they can only process 1 gift card per transaction?

buy I guess you never know, maybe on pre valued gc is different

The limit might be only on variable gcs not fixed...

Experience.
Even 1 fixed value per transaction or specifically only 1 variable

ETA: just got back from a sammies run & was able to buy 5x$200 MCGC at SC along with a $200 SCGC. Transaction went smoothly on my amex. Got home an bought a $200 mcgc from sc online using the $200 scgc, a $5 scgc i got with membership and $1.48 on my visa. looks good to go.only other question is if i can split pay when buying multiple mcgc/scgc in store.

I (and others) have been assuming that you can buy one $500 (variable) card + other items in one transaction. e.g. SC GC, $200 MC GC. This is incorrect. Nothing else can be bought after the $500 card is scanned (I'm not sure about before; I'm assuming it would be the same). So the $500 card is not the best way to max it out. The best way is with $200 MC GCs, or SC GCs. The fee on the 200 card is $6.48. You can get 6 of them for about $1238. Not bad for a $1250 max. :D
