I had COVID and 2 Moderna shots, making me more protected than pretty much any Israeli. It's just pathetic at this point. I'll be happily spending my tourism dollars in Africa this month instead of Israel.

About 15% of Israel was "documented" as having covid. It's likely more than double that number in reality. Many of those (myself included) are from the 40+% that received 3 doses of Pfizer.
So I don't know if that counts for "pretty much any Israeli". (Not denying that you have high immunity. Just saying that a huge percentage of Israelis are on par)
(Unless there's already data proving that Moderna x2 is still more effective than Pfizer x3?)

Yes and no.
Many got their third dose just because the government now requires less than 6 months from your most recent shot. So anyone who had Covid without testing etc., needs to get his shots up to date to have a תו ירוק

If you intend to vaccinate anyway, why wait for the last second where you may have issues?

First of all, I only intend to vaccinate if it will get me into Israel. (Per my doctor's advice, not need for me to vaccinate based on my level of antibodies.) Second of all, if they are only going to give a six month window, the later you vaccinate the later that window closes for another trip.
