We freeze our esrog until TU B'Shvat and make esrog eingemachtz (compote) with it.
From what I've heard, you really shouldn't eat esrogim due to the strong pesticides used to keep them pristine.

Traditionally the part of the esrog eaten was the white flesh. Nowadays people use the pulp to make jelly and discard the white  There should be no pesticide in there.
