But might not be worth it based on cash rates.

Miraval arizona and Austin are between 600-800 per night, of course it's worth it!

Correct. so after the bogo and 25% rebate and 2,500 bonus points (If it's your first stay) you're paying 23,125 points per night.

Miraval Austin told me they do have a kosher menu (needs to be reserve a week in advanced) from york street market.

anyone know who gives the Hechsher?

Just got off the phone with Tim from miraval Berkshires, they also have a kosher menu from York st market that needs to be ordered a week in advance.
