You'll want to book a parking spot in their garage on SpotHero before you go.
Bar is closed in the morning, but restaurant on 16 will serve you drinks on the couches outside.

The Signature Room at the 95th
Pros:Great view of the city. As a party of two you'll probably be sitting directly by the window.
Cons: They don't accept reservations, so depending on the time (especially around sunset) there may be a line to enter. They card  from 7PM and on.

I'd have done it, if the right opportunity presented.

You can also just purchase refundable tix and use any other airline to which you have access.
Of course, it means going through security. But at least then you know if she carries weapons on dates.
