Should I be concerned about having this phone without getting filtered and just running the 'adb shell pm uninstall --user 0 com.android.browser' command to remove the browser?
Are there any other ways to get onto the internet on this phone? (email/txting dont concern me)

No that's perfect. I've done that for many freinds who asked for me to remove it.

 That's what I would do if you want to be able to install apps and not slow down the phone. Or worst case scenrio having the phone require medical help with all it's seizure's, Lol.

No, it's not the same.
LG Wine 2 Model# LG-LMY120UM is locked to US Cellular (https://www.lg.com/us/cell-phones/lg-lmy120um0auclpl-us-cellular-wine-2).
LG Wine 2 Model# LG-LMY120QM is unlocked (almost impossible to get it, see: https://www.lg.com/us/cell-phones/lg-lmy120qm7abptpl-regional-carriers-acg-lra-wine-2#pdp_where ).
LG Classic Flip (Model# LG-L125DL) was specifically built for Tracfone (and its children-companies), and is not even listed on LG's website.

The eBay seller in this link made a big mistake. It is not a UN430.
The UN430 is this: https://www.lg.com/us/cell-phones/lg-UN430-Grey-grey-wine-2 and is a 3G device, not 4G (They both share the same name: LG Wine 2, but the 4G device name is "LG Wine 2 LTE" ).

In any case, before purchasing this item make sure that you're getting an LG Wine 2 LTE, Model# LM-Y120

If you want to use any other sim besides for Verizon, if it's the prepaid version you'll need to unlock it for $5.
 Or just use it for verizon with no issues.
