What to eat for lunch?

Last nights leftovers

that's my lunch a few times a week. i especially make sure there is an extra portion when cooking dinner. i also take salads, soups, sandwiches. i sometimes have crackers/rice cake with some sort of dip like tuna, egg salad, chumus, chatzilim, cottage cheese, etc...

i also always have nuts and candy in my desk JIC i decide i'm not in the mood for my lunch or forget to bring.

worst case, i get something from a local restaurant. i usually ask coworkers if they want anything so i can meet the minimum for delivery.

With sandwiches, lunches are easy and always have starch + protein. Stack two pieces of bread, lift the top one and insert any of the following:
- Scrambled egg
- Egg salad
- Tuna salad
- Peanut butter (not just for kids)
- Sliced avocado
- Cheese (melted or not)
- Cold cuts (range from bologna to pastrami)
- Grilled chicken slices (if you're into wraps, cubed is great)
- Veggie patties
- etc

Yummy hot or cold.

I'm not a veggies person either and that's why I would never think of trying this, because as you said there's no substance to it without veggies
