Summer Trip during Covid

Hi, I'd like to go away for 10 days to 2 weeks from NY.  Me and my husband are not vaccinated. 

We have most kind of points and don't mind spending $$$ in addition to points. 

What are my best bets regarding covid restrictions etc.

Was thinking Greece, Morroco and maybe another european city.

I won't have enough time to get the 2 shots and then wait 2 weeks before going.

What are my best options if not vaccinated?
