I would like to set an automation to text a reply to every person that calls me over the 8 days of Yom Tov that I am not working this week. Is there a way to set a text auto reply to all incoming calls?

No - Shortcuts doesn't have the ability to be triggered for a phone call.

ive always been intrigued by the shorcuts app but its like a locked gold mine- no one seems to know how to fully use it and the suggestions they give arent great.

whats some really good things ppl made with the automations?

I'd imagine it's because the average iPhone user isn't very automation oriented.
Perhaps look at automations made with tasker and try to imitate.
