Made an order from a kosher store for "Challah" and they sent Water Challah.

If someone orders Challah what do you assume it implies?

(Store doubled down saying unless specified we always send water challah as it is more popular than egg challah)

According to ISO challa is flour, egg, yeast, sugar, salt, water. Challa has egg, challa without egg is chumtz matzah.

I would say its the opposite - from the bakeries I know they sell loads more egg (=regular) challah than water so if someone were to order they would need to specify water or else they'd probably get egg.

I'm thinking maybe the place you ordered from has a different definition of egg challah and they're referring to these low flat Challis that have a soft crust are very spongy and yellow inside? Because those are actually not so popular.

According the the bakery I just spoke to “If you order challah” he would assume egg challah.

I would side with you, but ig each bakery could have their own policies. How much Challah are we talking about that the bakery wasn't willing to just send you some egg Challah to make things right?

It's a regular grocery store. They are 20min away, so probably don't want to "ship" it that far.

I'm just saying egg because that is what they called it, I just want regular challah... See conversation above. In my order I simply said Challah.

This happened to me a few years back, in a regular bakery.  I asked for a challah, took it home, and it was tasteless, so I didn't return to that bakery.  A year later, I'm surprised to taste a delicious challah as a Shabbos guest, and when I ask where they got it, it was the same bakery.  I hadn't realized there were now two kinds of challah.  I assumed the reason they gave me the water challah was not due to its popularity, but because it had fewer expensive ingredients (egg, sugar).
