I had one of those cuisinart Sandwich makers for my grilled cheese needs, but it broke.

Looking to upgrade to a more adult version, but not adult enough to actually use a frying pan.

Any ideas?

Everyone raves about the Betty Crocker pizza maker, that it's a versatile tool for almost anything. Did you try it?

Go with a panni press with adjustable height. The pizza machines are dangerous as they are very easy to get burnt with, and are difficult to clean especially with melting cheese in the surface. If you do go with the pizza maker use parchment paper, I've gloves, and something like this https://www.restaurantsupply.com/matfer-312504-chrome-steel-12-1-2-round-cooling-rack-with-feet?

The Betty Crocker cleans very easily with a wet paper towel. More stubborn spots will come off easily if you put a drop of water on top and plug it in for a minute or two.

If you go with a panini press, don't get the Bella one that was on sale after rebate from Macy's. It's slanted so things slide out.
