Re. 17 Tammuz, fasting on a trip is no fun. Also, if I move up the trip, instead of leaving Sunday I'd need to leave on Wednesday unless I want to end up in Gander for Shabbos (or do I have it all wrong :-X).
Fasting anywhere is no fun, but in Israel the fast will be over earlier. I don't see any reason to plan around it.
No need to leave Wednesday, just don't arrive within a few hours of Shabbos. Go buy some Hilton certs on DDF and spend your first Shabbos at the Waldorf Jlem.

100%, but I am not sure where to find that information on these sites, besides for Blackout which has Rabbanut Tel Aviv currently (it seems), will edit that one.

Definitely rent a car if you are going to go outside of Jerusalem. You can accomplish a lot more that way

Like stated above Ein gedi, masada (would do Sunrise and definitely in the summer!) and dead sea can be done in one day. Ein gedi actually has the the generic one hour hike that everyone does to full day 8 hour hikes (and you will hopefully get lucky and get to see some ibex!)

The bullet factory is really cool and a great off the beaten path stop (central Israel)

Rosh Hanikra is really beautiful and worth a stop. Thats up north literally on the border of Lebanon in the galil

If you are there only one shabbos has to be Jerusalem. For the second shabbos I would say toss up between Tzfat and Chevron.

What exactly is considered the Kotel? The entire plaza? The actual prayer area? The tunnels? Is the issue visiting or just davening there?
