I would usually bring leftovers to work.

Tried that. my wife would cook extra dinner but i would end up just eating more at dinner :-[

Try a 7lb rib roast for 2. You will have leftovers.  :)
Only on DDF does 24/6 mean 24/5/half/half

That's an expensive way to have lunch the next day, with a side of gout if someone does this regularly...

Recently I've been trying Protein shakes/meal replacements (trying to cut down on carbs).

Previously I would have thin corn cakes (Blooms has a pack that has smaller individual packs in it) with a can of Tuna (I keep salt and pepper in my office). Gefen sells pre-cooked chickpeas or lentils. Can be eaten cold or hot.

Occasionally I'll bring a sweet potato and just stick it in the microwave for a baked sweet potato.

I have a microwave, a refrigerator and a sink in my office.
I've been waiting over 5 years with bated breath for someone to say that!

I'm eating corn cakes for lunch right now, they might be lower on carbs and/or gluten, but they have a very high glycemic index and aren't particularly healthy on a regular basis.

While GI is rather high, the total amount consumed is usually rather low, as the weight per surface is low, and when using for something to be topped with the main thing being eaten, I would guess that they might be better than other alternatives.

Huge fan of the Hot Logic Mini - used it for many years (way back in the office days :) ).

Would it work for BYOK on a plane?

If you want a toaster oven, options open up. On a Dansdeals black friday special toaster, I've done salmon filets from Costco with salt and pepper, and they were delicious.

I do a lot of leftovers. Sometimes sandwiches - I use whole wheat bread to make it healthier and taste better. Anything from cheese mayo and tomato, PB&J (the type of Jelly makes a big difference, I use preserves or something similar), pastrami with mayo and mustard, etc.

Another option is a simplified version of a greek salad - romaine lettuce, tomato, cucumber, hard boiled egg, feta cheese sprinkled on top (Costco also has really good Tnuva feta cheese). if necessary, you can cut out some of the vegetables and it still works.

I buy lunch for the office occasionally, try to keep it simple.

Wraps - Tuna, Avocado
Pasta - Penne, Fettuccine
Sushi - assorted platter of fish and vegan rolls
Salad

Leftover wraps and pasta can last another day or 2.

So many options with a toaster oven.
A freshly toasted wrap with sauce and cheese inside is delicious.
Save your time, I don't answer PM. Post it in the forum and a dedicated DDF'er will get back to you as soon as possible.

I used it to warm BYO meals on the plane. No need for FA favors.
