Using esphome everything is possible and is fairly easy form a coding standpoint. It's not user friendly though.

I see this, but I'm looking for something with a switch, as I'll be using this in a shul, where plans can change on the go. I know it can add wifi switches. So ny question is if all these will be compatible with your software.

And your software is compatible with it? Or it needs tweaking?

Every new device needs tweaking to get it to match that devices pin layout, and to add a few more relays would require a bit more tweaking. Not for the faint of heart, but should be relatively easy for the diy style person

Most devices don't have a real time clock in them so it's unreliable to keep a clock running without internet. Definitely doable with some DIYing. (requires minor tweaking to the source code for the time)

Anyone have a link to a good light switch I can try Melacha Plug with? I currently use Zman Switch but in a power outage it resets. Additionally, I find myself replacing it every few years (defect?) I want to try a cheaper option.

Also, with this, is it easy to add timers for the light to turn on/off, multiple times per Shabbos/YT?

In it's current implementation it's meant strictly for set and forget it applications. For things that need to be either always on or off for shabbos and yom tov

Anyone know of any other switch (GE, Leviton Kasa) that has an easy way to integrate full Jewish Calendar and set times for each holiday? (I feel like I am asking for too much, but you never know...)

I have that set up on smart things. When mode is shabbos/yt then there is a trigger set up that when the switch turns on it turns it right back off. Though this only helps for the light not being on. You still would have had the issue of having turned on the light

Yes. It a system which runs separately but locally, look it up.

Home Assistant can probably work offline, would need a router without internet so the smart devices can be on the same network.
