Does anyone know of a way to get insured while residing in Israel?

US companies are not insuring Israel residents at the moment bec of the war.
Israel companies require you to make aliyah, be here for at least 4 yrs, or have bought a house.

Any ideas?

I will be moving back to the US eventually, just I want something for the meantime...

Even if eligible, US companies require application (and any exam, if needed) to be signed in the US.

US companies are also not very keen on issuing term insurance for non residents. You might have a better chance if applying for permanent insurance, but either way paperwork will need to be signed in the US.
I've been waiting over 5 years with bated breath for someone to say that!

Bump. Any other ideas?

If I am required to physically be in the US to sign documents etc. that can be arranged.

While you are working things out, donating to areivim is better than doing nothing.
In terms of monthly donations, I donate to the full compliment of programs offered by vaad harabonim.
The basic plan collects most months the maximum 64 nis
The expanded plan collects on average half a collection every other month IIRC
The monthly support for yesomim is collecting about 4.5 shek a month these days.

Comes straight out of my maaser cheshbon
Again, not insurance.

Areivim US? Or is there an Israeli version? Do you have a link?

And this Vaad Harabonim is the same things, or a separate program?

Israeli version.
Vaad harabonim and kupat haair each run their own separate areivim funds.
You can register to donate on any nedarimplus location.

With regards to your other questions...
It's tzedaka. Don't do the math  see if it's cheaper than insurance, there's no comparison.
During covid, when they had a wave of deaths, the rabbanim involved levied an additional charge to cover the surplus deaths. Anyone who did not want to pay, was able to leave the program IIRC.
There were actuaries who had major problems with its structuring when it was first formed, no idea if that is  still the case.

I don't really have an alternative to do insurance, simply bec no-one seems to want to ensure me (I am in a "war zone" after all) - so cheaper or not, I'll still take it.

What I don't understand is how the payout works. It seems like they only pay out at the time or an orphans wedding, (and not immediately after death ch'v) and only to buy an apartment.
Also, seems like they only payout if they deem it "necessary" (and the rich Americans don't reeeaaally need it...)

Do you have the link for the Kupat Hair version. I can't find it online...

There is also this one https://en.kyachad.co.il/ but they also seem to be more as a payout for orphans to cover wedding expenses at the time of the wedding

I will be moving back to America within a few years, so for me this is more of a temporary thing so that I'm covered for now and would want payout now (and not at the time when my children are getting married)

The funds given at the time that the children get married because that's exactly what this tzedaka is - a dignified way to collect for the chassunos of yesomim, and for better or worse, buying an apartment is an intrinsic part of an Israeli-Chareidi shiduch.
I wouldn't worry about the rich American part, unless you really are a RICH american. They'll look at your finances, and if you dont have money, you dont have money.
The Lemichyasam/Lekalkelasam programs are a dignified way to collect for the monthly upkeep of yesomim and IINM all of the various tzedakos say that they will distribute regardless of the family's financial situation.

There is also this one https://en.kyachad.co.il/ but they also seem to be more as a payout for orphans to cover wedding expenses at the time of the wedding

Again, it's tzedaka not insurance, and dont expect it to pay out in the same format as insurance.
Yachad looks to be the exact same thing as the others, just targeted at the chardal, dati communities
