why not? Caterers do it all the time. They even run propane convection ovens in the back of the truck

Is the tank inside the truck too?

A box truck? Inside the back?

yup. Welcome to the world of kosher field catering. They don't operate the ovens while driving. But they transport everything in the truck.
Put the propane tank in a milk crate to secure it.

If you're worried about it exploding from the heat, it has a pressure release valve.
I wonder what people who type "u" instead of "you" do with all their free time.

Do I have to “activate” it, or does it work by itself?

It works by itself. If the pressure it too high, it automatically releases some of the pressure.
