Depends how fancy you need it to be. You can do something with deli, but mainly have a ton of salads and sides. People can eat a slice to be yotzeh.

I am definitely no expert on this, but I'll throw in my 2 cents.

After a fast people might not want something heavy. So I would go with something that combines bite-sized chicken, meat and vegetables. It could be deli sandwich platter, or anything else cooked, baked or fried. I personally don't see a problem with fried, but that's a matter of personal preference.

As @Euclid pointed out, soup is usually a good thing to have. I don't know if you need an assortment. Crowd size matters.

You want to have something to drink right after the fast. For the life of me, I cannot figure out the sense of having Orange juice there (I can name a few reasons why it's bad). Depending on the crowd, maybe some beer (which is also somewhat filling, so people might slow down on eating and not end up overeating or eating too fast), tea, and other soda (I personally don't go for anything sweet, but I understand that there are plenty of people that do. I don't know how smart a sugar rush right after a fast is).

Straight up like any other night.  Believe me people won't flinch and they will eat whatever.   My brother made a vach nacht tzom gedalia at night. Regular buffet

I would also like soup.  Two, I think, because I like to have a choice.  And then I'll choose to have some of each, so make sure there's enough. 

One, a chicken stew.  Like chicken soup, so easy to digest right after a fast, but with a lot less water.  Get rid of the bones, cut the chicken into bite size pieces and add vegetables and starch - chopped carrots, celery, zucchini, and sweet potatoes.  No spices, but maybe some herbs like dill or parsley.  So it's basically a easy-to-digest meal in one bowl, for those who don't want to stuff themselves right after the fast.

Second soup could be pareve/vegetable.  Maybe butternut squash, which is popular.  Could be either sweet, like butternut, apple juice, cinnamon, or not sweet, combining the butternut with other vegetables.  Anyway, I would blend this one, so it'll be a nice contrast to have one chunky soup and one smooth soup.

Also some kind of carb.  Maybe potato knish, or an assortment of knishes.

And something pareve, even though it's a fleishig meal, because some people might prefer that.  Maybe a vegetable quiche.

It sounds like this is a walk-around buffet, not a plated sit-down meal, right?
