If i was a Kohen and they served pareve cholent at a pidyon haben, I'd walk out with the baby on humanitarian grounds.

But what if you were ExGingi and he were a Cohen???

Maybe facon and eggs and/or chicken soup. Also consider salmon pockets, they’re light and filling.

Don’t worry, if they know you’re coming they’ll make sure to have parve cholent...

A close friend made a pidyon haben on tzom gedalia, but it was 10 years ago, so I don't remember what was served or whether it was well received. I can ask if you're really curious.

I'd serve whatever you would have served if it weren't a fast day, only adding mezonos and coffee before the meal instead of keeping it for dessert. I somehow doubt you would have served anything that heavy that it wouldn't go down well after a fast.

To many more simchas, and may your biggest challenges be how best to celebrate

Chinese dishes, kugel, sushi.   Regular food that might consider heavy for after a fast.  But everyone ate regularly

I made my son's P"H during the 9 days, opted to serve ribeyes :)  Honestly, Jews will eat anything anytime, so I wouldn't overthink it. Having lighter options like fish, sushi, breads, and less oily salads would probably be great.

In Lubavitch vach nacht is just for a few kids to come say shema and get pecklach. Hearing that it is a whole massive event was mind blowing for me
