if your schach can withstand a normal wind and you're tying it down just in case of heavy winds, does it matter what you're tying it down with?

What I do, is sandwich the schach between 2 2x4s and tie the 2x4s together so the schach isn't actually tied down.

Several things going on there. There's a separate but somewhat related shaila about the material used to hold together schach - let's leave that aside. The first thing is that many hold that if the schach is held up by something that would be kosher, and you're only tying it down to prevent it from blowing off in a ruach she'aino metzuya, you can even use something that's pasul for schach. The second thing is that even if you hold that you should only tie down with something kosher for schach, some poskim allow something that's only pasul midiraban. And the third thing is that the Shulchan Aruch seems to pasken like the Rambam who holds that natural ropes (חבלים של סיב) are kosher for schach.

Is tying down worse than placing a 2x4" on top of the mat?

AFAIK they're halachically the same. Tying down is not intrinsically worse. What you tie down with may make it worse than an unsecured 2x4 according to some opinions.

Cut to size is not the same as made into a finished product like a piece of furniture.
I wonder what people who type "u" instead of "you" do with all their free time.

The issue is not 'processed' per se. With twine, you have to know how it's made, and how that fits into the various shitos of the rishonim/poskim regarding tumah of items that are spun/woven/braided/etc.

I took my passul luluv I had bought to make the kesharim for my lulav and used one leaf, split it into two, meaning separated the two that are together, tied them together and used it to tie down the Shach.
