EHRs are complicated datasets. The vendor you want to move to can’t help you to migrate your data?

IME they usually say no. Which is weird, agreed, because shouldn't they make the migration as easy as possible?

First step is trying to get my old software to export it. They are notoriously difficult

Did you explore their reporting options? I was able to export almost raw data from eClinicalWorks using their eBO reporting suite.
