Thank you.  Given the February visit, should we be concerned with the cooler weather? Do any of the spas have indoor options as well (pool, etc...).  Should we consider beresheet in mitzpe Ramon? Cramim? If $$ were not an option... what’s the best choice out there?
The Setai in Galil is a good option.

Is there a mehadrin hotel with a spa?

My parents stayed there and enjoyed but don't know much besides for that. If you have specific questions then I can ask them for you but not gonna ask them to write a TR lol.

Never been there, but sent some people.
Its very nice and a Boutique style hotel, most of them enjoyed their stay. Its a very short walk to meah shearim.   All food come from the Leonardo plaza hotel as they don't operate a separate kitchen

Take in consideration that they usually dont serve  shabbat/ chag DAY meals only at night.
Check it out with them ( I think depends how many requests they have)

I can't comment
I generally don't like staying at any hotels over shabbos.

Jaffa is newer but not on the water.
Ritz is on the water/harbor and has a very nice boardwalk with restaurants right there.
