Has anyone ever stayed at the Olive Tree?  I heard good things about it from Israelis, just wondering if it's too close to East Jerusalem.
Just went there to visit someone. Even though it's on the other side of the road, it's kind of a bubble, and is literally across the street from the entrance to Meah Shearim/Shmuel Hanavi.
So not an issue IMO.

They told me on the phone that the hotel will charge me a full rate if I arrive with a 3rd person. Did anyone have experience in this? Or know how this works?

Leonardo Club Hotel Tiberias.

Great location; couple of minutes from the boardwalk and restaurants.

Was there 2 years ago, so can't comment on the hechsher.

I have a local Rav in Israel  (Rosh HaYeshiva from when I went to Yeshiva there) that I ask all hechsher-related questions to and he told me that he's eaten there himself so that's good enough for me. But of course, gotta do what your comfortable with and follow your Rav.

I'm glad you were able to enjoy, as I've heard it's one of the best restaurants in Israel, if not the best. Unfortunately I was never able to get a definitive answer
