Ruth hotel (now owned by Dan) is our favorite, but it’s rabbanut tsfat so some may not hold of it. Mashgiach is a nice man and speaks fluent english and can point out where meat/chicken is from but note they do use heter mechirah.

Last time I was there (4 years?) It was literally falling apart.

why on earth would an israeli hotel renovate ? you will pay the same price anyway. but seriously, the modern rooms are shabby but they work, and its still better than the other tsfat options (unless u will pay a ton for an upscale airbnb without breakfast/shabbos meals).

Stick with places with a decent amount of reviews and you should be fine
i've never had an issue with airbnb, and have done many bookings

I stayed at the normal one off Yafo (not styles) and we wrre happy with the small room and small beds and small towels bc the price is right and it’s a great location. Stayed away from the styles bc that is off the actual street by town and u need to drag your bags over cobblestone instead of having your car come up to the door/elevator.
Note i found a discount price on capone travel if u have A venturex and want to use your $300 credit.
