Many hikes and lookouts at different places along the Columbia River Gorge.

Crater Lake is supposed to be awesome but I'm not sure what the snow situation is over there at this time of year.

Crater Lake is awesome, but it's like 100 miles away from Portland. You could check out Powell's (world's piggest bookstore), and the assortment of weirdos at Pioneer Courthouse Square.

I was in Portland last during the great east coast blackout, can't really help you out too much.  I recall Albertson's having a lot of kosher stuff back then.

That's around the same time I left.

Albertson's Kosher dep. became better since then. They opened a Kosher Deli too. But I don't have the latest info.

I recall that dune buggy on the Oregon coast sand dunes (Florence I think) was a lot of fun, but that's about 3 1/2 hours - 183 miles from PDX.

Oregon is beautiful with alot of amazing nature to see.
 However during the winter if you go for 2 days there is a good chance that it will be overcast or raining the whole time.   
that said the columbia river gorge with all the waterfalls (not just multnomah) the lookout point (i think its called crowne lookout point) the coast (did the 3 capes this summer was really ) council crest (great view of the city and mt. hood st. helens mt. adams)
if you want to see the keep portland weird side of it check out hawthorne or alberts st.

I live in Portland, OR. It is really beautiful and amazingly family friendly - but the winter season is rainy.
There are tons of hikes, parks, mountains - skiing on Mt Hood, Mt St Helens Volcano. For kids there are lots of attractions - OMSI is one of the best kids museums in the US.
The Oregon Coast is also beautiful - but the water is cold year round.
Kosher cholov yisroel Pizza store at the J. Safeway and Albertsons have fleishig delis (Safeway has Sushi) under Oregon Kosher which is run by Rabbi Tzvi Fischer of the Portland Kollel.

I've spent a lot of time in eugene; Oregon overall is incredibly beautiful, Atv'ing on the sand dunes is unbelivable since I've done that no other Atv rental comes close, crater lake is far but but worth the drive, sea lion caves in Florence (on the coast) are cool, there is a kosher falafel stand in eugene near the Univ of O

No really fancy hotels - but there are really beautiful houses & cottages for rent. Plus there are some nice motel style hotels.
