Anyone know if infants are allowed in the Mammoth Caves National Park tours?

Depends on the tour.  Check https://www.recreation.gov/ticket/facility/234640 for your specific tour.

It does not specify, just says "Children 5 and under do not require a reservation or ticket.".

Red River Gorge Kayaking - $55.

Cool Tour in an old flooded mine. Always 50 degrees inside. 
Worth the price and experience.
Also a boat tour and a "SUP" - stand up paddle tour.

Hiking - One of the main attractions is the Natural Bridge ( https://toredrivergorge.com/natural-bridge/natural-bridge-via-balance-rock-and-the-original-trail-1-5-miles/)
Reminds of me of Mearat Hakeshet in E"Y ( https://www.israelandyou.com/mearat-hakeshet/).
Most of the hikes are steep in this area. Fun but can get a little strenuous at times.
