I couldn't believe how much smaller the actual shiur was, and how much less strain there was on my stomach...

There is an added benefit of not wasting so much time during the seder measuring out shiurim for everyone, as everything is prepared in bags from erev yomtov

yes.  many have tested the volume and converted to weight measurement. If you prefer, you can crush your matzah to measure by volume

I think the traditional way of having each woman (the adult men have their own kaara) hold up some matza and having the father shake his head until she adds enough or he gets tired of shaking is better.

Why can't someone design a nice size becher with a false bottom so it can have less wine, but still be the same impressive standard look?

in his sefer he also quotes testimony from Chassidim on Russia for slightly bigger numbers. 3.5 or even 4oz.
