Kosher Food on cruise - last minute booking

Does anyone have experience with getting kosher food on a last minute cruise booking?
MSC Cruise from port canavera indicates you need to order 3 weeks prior to embarkation. Carnival Cruises indicates you need to order 2 weeks prior to embarkation.
what does everyone do about last minute booking? Is it like on planes where they usually carry Extra Kosher meals?
is either cruise line strict about brining kosher packaged food on board?

Im a cruise newbie and am curious- it seems like its cheaper to book a solo inside room, and a solo balcony room than a two person balcony room.
is there any downside to doing that?

imo, is cruise line specific. for example, msc charges $30 pp/day so would be skeptical if they have enough extra on-board.

if memory serves me, carnival was able to accommodate my kosher request even though it passed their cutoff date.

carnival allowed all food stuff to be brought on board.
