What's with all the plain vanilla?

I think a good vanilla showcases a quality ice cream.
You can mask a lot of junk or problems with flavor.
Sort of like flavored or sweetened coffees.
Vanilla is also more versatile- you don't want strawberry ice cream in your affogato, nor do you want to mocha almond crunch on top of your apple pie.
