Same reason I don't toast my own spices and grind then fresh.

Besides for the obvious that it's unpasteurized... It smells and tastes much better.

What difference does the pasteurization make? How is the flavor better?

I try to stick to gluten-free tamari or soy sauce- so I'm just wondering how I'm missing out or what I should like for in a gluten-free version...

Yes that's what happens when you're deprived of Cheesecake when your little,
    Or you've been eating nasty cheesecake all your life, you got to come over and taste some delicious tasting cheesecake and you'll never say that cheesecake is gross again..

Depends on what you're putting in it. Nut butter based cheesecake shouldn't be baked because it will change the consistency of the cake. The two that I use that are no bake (and no gelatin) are Nutella based and peanut butter based.
