How did it work out?
Just saw the reply so here's my experience. Not worth it! ;D.
Lemme explain, I buy lots of fresh Tuna from HI and CA that are shipped to me overnight not frozen, and i thought it will be the same way with the salmon but they came frozen vacuum packed in 1lb pieces (not very nice ones) and i order 1 5lb piece, and when they were defrosted they were kinda mushy, i was under the assumption that im getting Fresh Caught Salmon not frozen specially since im paying $75 per lb.
As far as the taste i only had them raw ( i still have 2 packs ill smoke 1 and sear the other to seee what they taste like cooked) they were very good but i dont think they were worth the price, Scottish or wild Atlantic are much firmer and smoother textures, and alot more fat.

I fully understand that it might have been the company i bought it from next time around ill do better research and try to get them not frozen.

That they were frozen may have taken care of this. Freezing cold/long enough kills them.
Just be careful checking for parasites in fresh wild salmon if you are not cooking it. They can be very dangerous.

My fish mongering patient said this is the best farmed salmon. Can't even keep in stock because it gets sold out so quickly.

I like Lieber's Mushroom pasta sauce for lasagna etc. Barilla makes mushroom too but it's not as good.

- Serving & Refrigerating Shabbos Fish -

1 - Always wear disposable gloves when serving, so
a- can directly touch food to 'plate it' nicer / easier
b- hands don't get sticky & don't need to use so many napkins to clean them / don't need to keep washing hands (preventing dry skin)

2 - When storing over Shabbos, use only disposable pans. Not worth storing in a reusable container - washing, removing odor, etc. For a few cents every week, the pan can be tossed in the garbage and no hassle involved.
