I never heard it referred to as the Pupa cookbook. It was always called the Balabusta cookbook, but I guess they are published by Pupa, and the first 2 are really great.

I haven't done ring, I do mini donuts (like 2" diameter) and fill with custard/jelly and they are great.

I haven't made that method myself but from tasting them I think so. They aren't as heavy/doughy, more fluffy.

2 cans chickpeas (drained and rinsed)
1-2 tsp. salt
1/4 cup sugar dissolved in hot water
1/4-1/2 tsp. black/white pepper
1/4 tsp. crushed red pepper

Put the chickpeas in a container. Mix the rest of the ingredients and pour over them. Refrigerate until well marinated and flavorful (you may need to flip over the container).

Thanks. What size cans? Can I leave out the crushed red pepper or have you got another substitute?

15-16oz. I find that it gives just the right kick, but you can leave it out.
