What's wrong with the sauce it cooked in? Very hard to make another sauce without knowing what was in the original one it cooked in so it doesn't clash.
The recipe was to bake with wine + s&p. After cooled was combine sauce ingredients in pot and pour over the meat. I don't like the sauce as the soy sauce stands out too much. I haven't put it on the meat yet as I tried it first.

You can fry onions and reduce wine, if you like sweet use any BBQ sauce recipe online. I have many meat sauces but they all cook for a long time with the meat. Not so sure what would work well for this kind of thing.

Yes many times. Tedious, pain in the neck, and not really worth it IMO

My brother served frozen dumplings instead of kreplach on hoshana rabba and they were significantly better (and cheaper) than heimish takeout kreplach.

If you don't care how they loom, it's not difficult. Pleating is the difficult/ tedious step.

I use the premade Gefen round wrappers (freezer section). After defrosting ensure that you keep them covered so they stay pliable and don't harden.

The meat mixture is just ground meat and spices. Go wild here.

Watch YouTube videos for tips how to to fold/pleat.

Buy bamboo steamers and line them with parchment paper. Cook over a pot of boiling water.

i used to use cabbage or shredded cabbage instead of paper.

Pizza dough. Chef John has a video about pizza dough donuts which I tried and it worked quite well. Basically just roll out the dough to about 1/2" thick, cut out pieces (shape is up to you, I did squares to not waste dough) and fry. Coat in granulated sugar, powdered sugar, cocoa, etc when they come out (they need the sugar or they won't be sweet because pizza dough...).
