Do eggs NEED refrigeration?
Here, yes.
There, no.
In America hens are not vaccinated so eggs are washed, this helps with salmonella, but also washes off a protective coating so they need to be refrigerated.
Most other places vaccinate their hens, so there is need to wash them and therefore no need to refrigerate them after.
(but hey at least our hens don't have autism)

Just because you didn't get sick one time doesn't mean it is safe, especially for at risk people (young, pregnant and old to name a few). What might result in an upset stomach for you (that you'll blame on the matza) can have much bigger consequences for them.
