I never heard it referred to as the Pupa cookbook. It was always called the Balabusta cookbook, but I guess they are published by Pupa, and the first 2 are really great.

you can use homemade dough the same way, why would you need to roll and cut-out?

My mother always did it this way: , I haven't even heard of the cut-out method until (relatively) recently and it seems like it's a bigger hassle.

Is that for ring donuts specifically or for filled ones as well? Is it just for aesthetics or does it actually taste better?
I haven't done ring, I do mini donuts (like 2" diameter) and fill with custard/jelly and they are great.
