New Pupa cookbook is flying off the shelves.
This?
https://zbermanbooks.com/balabustes-choice-3-cookbook-pupa
I never heard it referred to as the Pupa cookbook. It was always called the Balabusta cookbook, but I guess they are published by Pupa, and the first 2 are really great.

Why would you roll and cut out. just deep-fry balls of dough (pre-made pizza-dough for a shortcut) and inject your favorite filling with these: https://www.amazon.com/Syringes-Scientific-Measuring-Watering-Refilling/dp/B07C71C1LH
because homemade dough is better

you can use homemade dough the same way, why would you need to roll and cut-out?

That's how you get standard round donuts

My mother always did it this way:
just deep-fry balls of dough and inject your favorite filling with these: https://www.amazon.com/Syringes-Scientific-Measuring-Watering-Refilling/dp/B07C71C1LH
, I haven't even heard of the cut-out method until (relatively) recently and it seems like it's a bigger hassle.

Is that for ring donuts specifically or for filled ones as well? Is it just for aesthetics or does it actually taste better?

I haven't done ring, I do mini donuts (like 2" diameter) and fill with custard/jelly and they are great.

Are they better than the ball method (i.e. classic sufganiot)?

I haven't made that method myself but from tasting them I think so. They aren't as heavy/doughy, more fluffy.

But you don't have to take my word for it, try both and let us know!

2 cans chickpeas (drained and rinsed)
1-2 tsp. salt
1/4 cup sugar dissolved in hot water
1/4-1/2 tsp. black/white pepper
1/4 tsp. crushed red pepper

Put the chickpeas in a container. Mix the rest of the ingredients and pour over them. Refrigerate until well marinated and flavorful (you may need to flip over the container).

Thanks. What size cans? Can I leave out the crushed red pepper or have you got another substitute?

15-16oz. I find that it gives just the right kick, but you can leave it out.
